I’m trying to create a gif from a clip on youtube of a process that occurs in biology as an extra detail card to make the concept seem less abstract, but I’m not sure what’s the best way to do that on Remnote. Does anyone have suggestions?

Since a .gif is a special type of image you can also upload it to RemNote servers directly by pasting. But it is pretty hard to get a gif into the clipboard. You can work around this by focusing a rem first and then drag&dropping the image into it.
Note: If you are on synced KB make sure to only upload small gifs (like < 3 MB) to not slow down your RemNote experience too much. On local KBs images (and gifs) are stored on and loaded from your harddrive, so you are fine here.
