I often use the >> to make flashcards however, I haven’t been able to find a way to not accidentally make a flashcard when I need to actually use the “greater than” symbol. An example is below:
Here I just resulted to writing “over” instead of using the “>” symbol which I would have prefered for simplification of notes. Thank you!
Use quote formatting to insert any characters without them being interpreted. In your case, you’d hit ` twice, type in >, then hit ` twice again.
RemNote should really make the flashcard trigger customizable so the people who want those symbols can have them back. Using KaTeX or quote formatting is a lousy workaround.

Crucially, both of those workarounds will always work to insert any character no matter what symbols are used for flashcards.
