I have a few documents I want to share but I don’t want my name to show on the shared document. is there a way to change that or replace it by a nick name ?

Not yet, but this should be a feature. I suggest you make a feature request for a little more advanced profile management, like Usernames, Names and Sharing anonymity. I would upvote that
